Favorite Summer Salad

The summer after college I started making a salad, and became fixated on it. Since then it has many adaptations, adding and taking away elements.  It is one of my absolute favorites and go to meals to have in the summer.  Sometimes I pack it and bring it for a picnic, sometimes it is my WFH lunch, either way super refreshing and satisfying on a hot summer day!

INGREDIENTS

Arugula

Peaches (RIPE), 1 or 2

Heirloom Tomatoes, 3 or 4

Corn (cut from the cob), 1 large

Red onion, ½ or 1

Prosciutto

Burrata, 1

Balsamic glaze

Extra virgin olive oil

Salt & pepper to taste  

STEPS

Clean arugula and place in your massive salad bowl

Chop the peaches and heirloom tomatoes, leave chunky

Remove the corn from the cobb

Thinly slice red onion

Combine all chopped vegetables and add to top or arugula

Put slices of prosciutto on top of vegetables

Pull apart burrata on top of prosciutto

Top with balsamic glaze & a drizzle of e.v.o.o.

Add salt and pepper

*as we know, I measure most things with my heart, so I urge you to do the same.
