Pulled Chicken recipe I have been craving lately

Lately, this has become my hyper fixation lunch.  I absolutely love to cook, but sometimes I want a fulfilling lunch that is a bit more prepared and better yet, super easy to make.  This has been exactly that, and the best part is you can cater each batch to what’s in your house. You will definitely need chicken breast, salsa (or sometimes I substitute canned tomatoes), salt and pepper and if I have it in I will use the Trader Joe’s Siracha seasoning.  I mix up my vegetables each time between onions red and yellow, bell peppers, tomatoes, jalapenos, and garlic, or sometimes all of them.  I will use 2-3 large peppers normally and at least 2 onions.  I roughly chop all of my vegetables, season the chicken with salt, pepper and siracha seasoning, whilst each chicken breast is cooking for 2-3 minutes on each side depending on the size.  Once that’s done I throw in all the vegetables, and salsa then make sure you use a lid to cover it, and cook for about 40 minutes.  Once it’s done I take two forks and pull the chicken, and re add it to the sauce. Give it all the stir, and serve as wanted! I have been using this to make wraps, lettuce wraps, tacos or even something more like a taco bowl.  Your sides and possibilities are endless, and it is delicious and filling!
